I think Severus has always been this emotional, but he's managed to build very impressive walls around himself by now. He's so proud of his precious control, isn't he? Being turned into a kitten reversed all of that, because the kitten is too young to have learned how to mask its reactions so thoroughly, so Severus is being exposed to his own thoughts and instincts far more than he'd normally be. He can't hide under his masks, because they are no longer there, and that leaves him uncomfortably exposed to his own desires and emotions, the poor thing.
